But I fear not! Because I have a recipe for the most amazing pancakes. Pancakes which are the fluffiest. Pancakes which are a game changers. Pancakes which will make you stay home in sunny Sunday and watch tv all day. The real headturners, the happiness bringers, the Instagram models and money savers.
Homemade Blackberry Pancakes
To serve
In a large bowl, mix together plain flour, salt, baking powder and caster sugar. Add natural yogurt, milk, eggs and butter. Beat very well, make sure batter is smooth and lump free. Stir in chopped blackberries and use spatula to mix the batter.*
Heat the frying pan over a medium heat. Grease it with bit of butter and olive oil.
To make sure batter won't stick to your spoon, dip the spoon into hot water, each before putting batter on.
(makes around 30 pancakes)
300 g plain flour
1 tsp salt
3 tsp baking powder
2 tsp caster sugar
225 g natural yogurt
225 g milk
2 eggs
1 tbsp melted butter
100 g blacberries, finely chopped
Butter and oil for frying
Honey
Dark Chocolate
Whipped Cream
Heat the frying pan over a medium heat. Grease it with bit of butter and olive oil.
To make sure batter won't stick to your spoon, dip the spoon into hot water, each before putting batter on.
Spoon the pancakes batter into a pan. One tablespoon of batter should be enough, pancakes will double the size when frying. Fry each pancake for around 3 minutes on each side, and cover the pan when frying, to make sure they are cooked inside. Serve with honey, grated or melted dark chocolate, fresh blackeriess and whipped cream.
