Jesus, this weather is killing me. I mean it supposed to be spring/summer time already, we all should be drinking prosecco on rooftops and wearing sandals. Instead of it, we got snow, bloody heating on and miserable moods. I officially decided to pretend I live in different, sunny reality where I eat light salads for lunch, brunch or whatever. I went to the grocery shop nearby and I bought a watermelon. I prepared super light salad which you guys probably know: sweet watermelon and feta cheese with parma ham. Taste delish with splash of olive oil, mint and glass of rosé wine. I guarantee a better mood and longing for summer.

Watermelon Summer Salad
(makes 1 portion)
300 g watermelon
70 g feta cheese
3 slices of Parma Ham
Seeds from 1/4 of pomegranate
Fresh mint
Olive oil
Salt, Pepper
Cut the watermelon into a large pieces and place on a serving plate. Cut the feta cheese into a small cubes and arrange it on the serving plate together with the parma ham and pomegranate's seeds. Add fresh mint, drizzle with olive oil and season with salt and pepper.
