Harissa Roasted Carrots

Spring time came faster than expected and there are only couple of weeks left until my summer holiday. 2 weeks ago I finished 9 days detox, and my dear reader, believe me or not I actually survived. I didn't even think I could actually handle 1 day without bread and candies, how about 9? I felt so much better after, but it's quite hard to keep healthy habits up, especially if (just like me) you consider food as a one of the main pleasures in life. I promised myself, after this weekend ( going to Paris again -Woo-Hoo - say hello to cheese) I'll do my best to bring back my healthy eating no matter what. I also realised that healthier recipes can be as satiating and delicious as my favorite not-that-good-for-your-health dishes. 
I found this recipe when randomly browsing on Pinterest. It's probably one of the easiest recipes ever and tastes really good. Roasted carrots in spicy-sweet glazed served hot with mint and greek yogurt which perfectly cuts spicy taste of harissa. 

Harissa Roasted Carrots
(makes 2 portions)
8 large carrots 
6 tbsp olive oil
3 tsp harissa
3 tbsp honey
Salt, pepper 
3 tbsp chopped fresh mint
70 g greek yogurt

Preheat the oven to 210 °C. Wash, peel and dry the carrots, cut them in half. Transfer to a baking tray covered with parchment paper. In a small bowl, whisk together olive oil, harissa and honey. Toss the carrots with the mixture and 1 tbsp of fresh mint and season with salt and pepper. Roast for 30 minutes until soften, then increase the temperature to 230°C and roast for another 10 minutes until browned nicely. When ready, arrange carrots on a serving plate, top with greek yogurt and rest of the fresh mint. Enjoy !
