Did you know about a Pancake Day ? Apparently we are celebrate it today and I am sooo late with the recipe, what makes me officially the worst food blogger of the year.
I came back from my ski holidays in French Alps 2 days ago and my head is still having time off. I really enjoyed this beautiful and snowy winter days, far away from rainy London, time full of french cheese, wine and painful falls on the slope!
I also spent long hours in the our cosy kitchen, where I could cook whatever I wanted. And the truth is, all I wanted was a french cheese. So once (or twice) I decided to treat myself with this beautiful, full of goodness crêpe. Yes, it does have a lot of raclette cheese in it. It's also topped with couple of the quail eggs, mushrooms and salami.

Savoury Crêpes with Raclette Cheese
(makes 15 crepes)
360 ml full fat milk
1 egg
100 g flour
2 tbsp melted butter
Pinch of salt
To fill each of the crepe you will need:
1 mushroom
5 salami slices
4 raclette cheese slices
2 quail eggs
Salt, Pepper
1 tsb butter
Place a small pan over a medium heat, melt the butter and fry sliced mushrooms. When ready, move the mushrooms in a small bowl and place salami slices on the pan. Fry it slightly and remove from the heat.
To make crepês, prepare a big bowl and whisk all ingredients together. Brush a crêpes pan with oil and place it over a medium heat. When hot, pour batter into the pan, rotating it quickly, to make sure whole pan is covered in thin layer of the batter. Fry for about a minute until underside is golden brown. Use a spatula to turn the crêpe over. Reduce the heat to the minimum and top with cheese, mushrooms and salami. Break 2 quail eggs and place them on the top of the crêpe. Cover the pan and leave it on low heat for couple of minutes until cheese melts and eggs set. Season with salt and pepper. Serve with gherkins or if you prefer a french word - cornichons.
