Caramelized Bananas Cake

Yesterday was a lazy day, which doesn't happen so often. I woke up at 10, decided to abandon my morning run and put Chocolate movie instead( I mean Johnny Deep could you be hotter?). My sister asked me to do something with those bananas we bought couple of days ago, as they are going off and need to be eaten. When I've seen this miserable bunch of fruits on the top of the fridge, I knew they will turn into an amazing Banana Bread. To make this recipe more exciting, I caramelized bananas and it gave this punch of sweetness and moist to my simple loaf. Soft, smelling like (banana) heaven and almost melting in the mouth. It's a such a wonderful afternoon cake, or even better quick breakfast on a way to work. Plus it fills your home with this amazing smell.

Caramelized Banana Bread
120 g sugar
80 g butter
3 large bananas
1 large egg
50 ml milk
1 tsp vanilla extract
230 g white flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Preheat the oven to 170°C. Prepare a loaf pan and grease it with butter and sprinkle with breadcrumbs or flour. Leave it on the side.
Place sugar and butter into a large size pan over a medium heat. When melted turn the heat up and make a caramel sauce. Simply keep stirring the ingredients  until mixture becomes brown and thick. Be really careful to do not burn it. When ready, remove from the heat and add bananas. Use a spatula to cover bananas in a caramel, and leave it for around 20 minutes to cool ( during this time bananas will become soft).
Meantime, whisk the egg, milk and vanilla extract  in a stand mixer's bowl. Add bananas and mix it, making sure the fruits are crushed. In a separate dish, combine all dry ingredients and add to the banana mixture. Use the lowest speed level to blend all ingredients . Pour the batter into previously prepared pan and bake it for 1 hour in 170°C.
When ready remove from the oven, and leave it to cool. Enjoy!
