Berries n Cream with caramelized sugar dust


 Hello in 2016! Thank you guys for your support and for checking my blog for time to time. I feel like in 2015 I finally realised how important hobby and passion in life is, how things which I love keeps me going and make me happy. I couldn't imagine my week without taking my camera out and shooting even couple of pictures, just for fun. I believe nothing comes easy in life and I need to work bit harder to make my pictures looks as beautiful as I imagine them. Sometimes I just simply wish I'd take my camera and shoot the most delicious images straight away, but let's face it - nothing comes easy in life and if I really want something I need to work hard.
This year I also decided to create a YouTube channel (Here ) something I wanted to do for a long time. As I absolutely love movies about food, so from time to time I will create beautiful dishes seen on the screen. I started from super easy dessert from " Chef" movie - Berries and Cream. Taste like heaven and take no longer than 20 minutes to prepare. Enjoy !

Berries and Cream
(makes 1 portion)
100 grams of berries : raspberries, blueberries and blackberries (around 30 grams of each)
2 tbsp orange juice
3 tbsp caster sugar
Handful of fresh mint leaves, chopped 

200 g white sugar 
120 ml water 

100 g double cream 
1 tbsp icing sugar 

Place berries in a bigger size bowl, add orange juice and sugar. Leave it on the side for around 30 minutes. 
Start preparing carmelized sugar. In a medium size pot combine 200 g white sugar and 120 ml of water. Bring to boil over a medium heat and cook till the mixture becomes thick and in caramel colour. Be really careful not to burn it.
When ready, pour onto a baking sheet and cool. It takes around 20 minutes for sugar to hardened. Break it into small pieces and put into a food processor fitted with a metal blade. Process until thin and powdery. Pass through the sieve to make a dust. 
Whisk the cream with the icing sugar to the medium peaks stage. 
Add the mint into the berries and mix carefully. Place berries on a serving plate, top with the cream and sugar dust. Enjoy.
