What I like about the breakfast is a variety. When some people can't imagine eating anything else than a croissant, I personally prefer savoury dishes. This recipe is my version of perfect morning - a turkey sausages, roasted tomatoes and an egg. All eaten with a fresh bread roll. Quick and filling, giving energy for couple of hours.
Breakfast for one
8 cherry tomatoes
4 garlic cloves
Olive oil
Salt, pepper
2 turkey sausages
1 egg
Heat the oven to 180°C. Place the tomatoes and garlic cloves on a sheet pan covered with a parchment paper, drizzle with the olive oil and season with salt and pepper. Roast for 20 minutes, until soft.
Meantime when the tomatoes are in the oven, fry the egg and the sausages.
Place a medium size frying pan over a medium heat and pour 3 tbsp of olive oil. Crack the egg into the pan and place sausages next to it. Turn the sausages every 2 minutes, to make sure they are nice and brown on all sides. Fry the egg until the egg white is set, but yolk is slightly runny. When ready, place on a serving plate together with roasted tomatoes and garlic. Eat with slice of bread.
