Plum cake


Autumn in Paris looks bit different than autumn anywhere else. I'm sitting on the sofa, sun is shining and smell of freshly baked cake is wafting in the kitchen. It's such a relaxing day and I already know coming back to London in one week will be harder than ever, because how can I return to reality after 3 weeks of laziness, pictures taking and traveling? I finally have time to play around with my new lens and grasp all the secrets of Lightroom, and since a long time I don't have to rush anywhere, which feels awesome.  Today I decided to use plums which I bought couple of days ago, and I made simple buttery cake, full of cinnamon, which tastes even better with a cup of hot tea or a hot chocolate. This recipe just scream autumn and coziness, so if you are planning long movie night or girly gossips evening (like me tonight) this recipe is for you. Just grab a blanket. 
Plum Cake 
(makes 8 portions)
6 eggs
140 g caster sugar 
185 g flour 
80 g melted butter
8 plums
Brown sugar and cinnamon to sprinkle 

Grease 24 cm cake tin. Leave it on the side. Preheat the oven to 180°C. 
Separate egg whites from yolks and place them into 2 different bowls. Add 2 spoons of sugar into egg whites and beat until stiff and fluffy. It must look like a foam. Pour remaining sugar into yolks and whisk until corporate. Add 2 spoons of egg whites foam into egg yolks. Using spatula whisk in sieved flour and butter. Don't beat it with hand mixer, as it will loose desired thickness. At the end add remaining egg whites and pour the mixture into previously greased cake tin. Top with sliced plums. Sprinkle with brown sugar an cinnamon. Bake for 45 minutes until until an inserted skewer comes out clean.
