Summer time recipe - Melon and Jamón Serrano Salad

After one week of partying in Marrakesh, my body needs little detox. I promise you I didn't have so much fun since ages, and for one week I didn't even lift a finger to do something more creative or productive than laying down by the pool. I ate so much excellent tagnies, couscouses and anything else what el turista can eat during 8 days stay in that amazing city. My body is just begging for something lighter, so I went to groceries yesterday and bought 25 pounds worth legumes and fruits.
Sweet, sweet melon with salty, smoky ham is a classic, but I went a bit adventurous and thrown some cherries, fresh mint and cubes of feta cheese. I loved the result and I hope you will like it too. Really refreshing, perfect for summer days as a starter or even a  main course. 



Summer time recipe- Melon and Jamón Serrano Salad 
(makes 1 portion)

30 g rocket salad
20 g fresh mint
3 slices Jamón serrano, or parma ham
Half melon, cut into wedges
20 g feta cheese 
4 cherries
2 tbsp olive oil
Black pepper, freshly grounded 

Arrange rocket salad and fresh mint on the serving plate. Wrap a slice of ham around each melon wedge, and put them on the top of rocket and mint. Cut feta cheese into small cubes, and place them on the plate. Pit 2 cherries and slice them, sprinkle the salad. Drizzle with a olive oil, season with pepper and remaining cherries. If you greedy you can also pour liquid honey on the top. Enjoy!
