Happy Sunday everyone ! How did the first 18 days of 2015 go? Are you guys having fun, or sitting on the sofa, being bored and watching TV? I know it's hard as it's super cold, we all broke after Christmas, and if you live in London it probably rains (ha ha ), but how about giving baking some lovely brownies a try? I mean who doesn't like brownies? Plus baking it's super fun, even more fun when you know you are going to take something super sexy and full of chocolate out from the oven and share it with your friends or lover.
I made this Delicious chocolate brownie cake for The First Official Movie Night with my friends, which had place 4 days ago. The rule is super simple: every month we are going to catch up in my place for wine, gossip, good food and a girly movie (no boys allowed). We had so much fun, plus watched this beautiful movie about love and food called The Hundred-Foot Journey.
I decided to change the original brownie recipe a little and add an extra flavour to it.
This cake it's still super nice, rich and really chocolaty, but instead of adding only butter, I decided to replace part of it with peanut butter and coconut oil, which it's one of my favourite ingredients at the moment. I also added pear slices on the top and I really liked the contrast in between darkness of brownie and light colour of pears.
So go ahead, invite some friends over and enjoy this absolutely delicious brownie, with glass of fresh cold milk or prosecco ;)
Pear and Coconut Brownie
(makes around 10 slices)
85 g unsalted butter(makes around 10 slices)
40 g peanut butter
60 coconut oil
185 g good quality dark chocolate
85 g plain flour
40 g cocoa powder
3 large eggs
275 g golden caster sugar
2 pears
Handful coconut shavings
Mix unsalted butter, peanut butter and coconut oil in a bowl. Break the dark chocolate into small pieces and add to our fat mixture.
Now, you have two options : you can put a bowl in the microwave for around 2 minute
Or
Melt butters, coconut oil and chocolate in a heatproof bowl, over a simmering water. It’s a traditional chocolate melting method called a bain marie.
Leave the mixture to cool down.
Meanwhile turn the oven on to 180 °C. Prepare any baking tin you want. Most of the people makes brownie in square tin, but I like to use round one, as I believe it makes my brownie look like elegant, chocolate cake. Line a base of a tin with baking parchment.
In the medium bowl mix together flour and cocoa powder.
Break 3 large eggs into a large mixing bowl and tip in 275 g caster sugar. With an electric mixer on medium speed (I use number 4 on my KitchenAid) whisk the eggs and sugar until they are thick and pale. It can take up to 6 minutes, so just be patient.
Pour the butter and chocolate mixture over the eggs, and gently fold 2 mixtures together with a rubber spatula.
Pour the mixture into the prepared tin, scraping every bit out of the bowl with the spatula.
The last thing to do before baking , is to add fresh pear to our batter.
Peel, halve, and core pears. Cut lengthwise into thin slices and arrange them on chocolate mixture, without pressing in.
Put brownie mixture in the oven and bake for around 25-30 minutes. Leave it to cool completely, take it out from the tin and serve.
