I absolutely adore Chocolate Guinness Cake for couple of reasons.
First,it tastes heavenly good. Beer as a one of the main ingredients in this cake, brings moist and extra depth to the sponge. It's also really rich and chocolatey. Secondly, it got a look. The contrast between dark cake and big,white, fluffy frosting is just impressive. I though it's a perfect colors combination for Halloween party, especially if I decided to pour edible blood all over it. It give this kinda dramatic, murder look, which I love.
Bloody Chocolate Guinness Cake
(makes 10 portions)
Cake
250 ml Guinness beer
250 g unsalted butter
75 g cocoa powder
400 g caster sugar
142 sour cream
2 large eggs
1 tbsp vanilla extract
275 g plain flour
2,5 tsp bicarbonate of soda
Topping
150 g cream cheese
600 ml double cream
2 tbsp icing sugar
Edible "Blood"
175 ml golden syrup
2 small drops of pink or red food coloring
1 table spoon corn starch
2 tsp dark cocoa powder
Preheat the oven to 180°C. Pour the Guinness beer into large saucepan and add the butter in small cubes. Wait for butter to melt a little, and start adding cocoa powder and caster sugar. Whisk it constantly, until butter is melted. In a small bowl beat the sour cream, 2 large eggs and the vanilla and add it to Guinness mixture. Finally, whisk in the plan flour and the bicarbonate of soda (to avoid any lumps you can pass it through a sieve first). Give it the final whisk and pour our dark batter into previously greased tin. To make sure cake won't stick to the sides of the tin you can also sprinkled it with dark cocoa powder. Bake for 50 minutes, and when ready, leave it inside the tin to cool completely. Normally it takes around 1 hour as cake is heavy, damp and full of ingredients. When ready, transfer it to serving plate and start preparing topping.
Pour double cream into large mixing bowl and whip it for around 4 minutes till it starts thicken. In a small bowl whip the cream cheese until smooth. Add it to the double cream together with icing sugar and whip it for around 5 minutes until stiff peaks stage. Spread icing on the top of the cake. I know it's a lot of cream, but I find it really pretty that way.
To make Edible Fake Blood pour your golden syrup into small bowl. Add coloring and mix it with spatula. Add corn starch and combine. Stir cocoa powder in, mix thoroughly, using the spatula to mash lumps.
Blood tips
- If you find it to pale, just simply add one more teaspoon of cocoa powder. It will help to achieve darker color of blood.
- If it's too too thick, just add some water, you will get more running consistency.

Your blood should be ready now, just pour it over the cake, try to get bit messy, as we want to see real scene of murder happening next to our cake.
