I embrace mixture of flavors which most of you probably knows too well: sweet tomatoes, soft, milky mozzarella and aromatic herbs. I truly believe simple things in life are the best, and I promise, those tartines will become your favorite quick meal, as they are not only super delicious and pretty, they also quick and easy to prepare .
(makes 3 portions)
400 g cherry tomatoes
6 garlic cloves
7 g fresh thyme
3 tsbp olive oil
3 thick slices rye bread
3 tsbp olive oil

2 mozzarella balls, 150 g each, sliced
2 tsp balsamic vinegar
2 tsp balsamic vinegar
Coarse salt, pepper
Preheat the oven to 180°C. Place the tomatoes into medium size baking dish, add unpeeled garlic cloves and sprinkle with fresh thyme. Drizzle with olive oil and season with salt and pepper. Bake for around 20 minutes, until tomatoes burst and soften. Remove from the oven.
Toast 3 slices of bread in a toaster and top it evenly with mozzarella slices. Bake for 10 minutes in 180°C, until cheese is melted. Take tartines out from the oven, layer with roasted tomatoes, garlic and thyme. Add salt if needed and splash with balsamic vinegar. Enjoy!
