Place chicken thighs into large frying pan over the medium heat, pour olive oil over, add salt and pepper. Fry for around 10 minutes on each side.
Meantime, peel and wash potatoes, cut them into small pieces and place in a large pot. Add cold water, salt and boil for around 15 minutes, till soft. Drain the potatoes in a colander, move to a baking dish, drizzle with olive oil, and sprinkle with fresh thyme. Cut garlic cloves in half and place on the top of potatoes. Bake for 15 minutes in previously preheated oven to 180°C.
After 20 minutes when chicken fried on both sides, turn the heat up, add bit more of olive oil and fry for another 5 minutes on each side. Add honey and sesame seeds. At this stage, chicken should turn really brown and crispy. Remove from the pan and move it to a serving plate, covered.
