Homemade falafel with tomato salsa
(makes 6 small falafels)
400 g chickpeas, rinsed and drained
1 garlic clove
1 small bunch of fresh coriander
2 tbsp lemon juice
1 1 tbsp sweet chilli
1 tbsp salt
1 tbsp ground pepper
1 tbsp corn flour
olive oil
Put chickpeas into the food processor. Add garlic clove, fresh coriander, lemon juice, all of the spices and flour. Blend until smooth, scraping down the sides of the processor every couple of second.
Move all mixture into clean bowl, and start shaping patties. I prepared mine quite small, so I ended up with 6 falafels.
Put 2 tbsp of olive oil into the frying pan, and when when hot start adding falafels. Fry them around 3 minutes on each side, turning when golden and crispy. Leave it on the serving plate.
Tomato salsa
2 large tomatoes, finely chopped
1 small onion, finely chopped
A bit of coriander, guess.. finely chopped
I tsp olive oil
Pinch of salt
Ground pepper
Combine all ingredients together in a small bowl. Leave it in the fridge for couple of minutes.
Chili guacamole
1 small tomato
1 avocado
2 tbsp lemon juice
half of chilli, chopped
Pinch of salt
Ground pepper
Chop the tomato. Place it into small serving dish.
To make guacamole, mash or blend avocados with chilli and add lemon juice. Season with salt and pepper. Mix it with tomatoes.
To serve
3 whole grain tortillas
Green salad
Cheddar cheese
Sour cream (optional)
