Last moment Valentine's day Shortbread


Valentine's day is coming! Are you excited ? Did you buy flowers, chocolates and pink champagne? I hope a table is booked, and your best dress's waiting to be worn in the most beautiful and romantic day of the year ! 

Ha ha. Just kidding.

I never really celebrated that day, my mood is far from pink, fluffy and sweet, but I decided to fight that little Valentine's Grinch inside me, and make some heart-shaped shortbreads. Yeah, you see I can be cute sometimes! 

Biscuits are super buttery, crumbly and come on, just say it, looking good mama!
Baking those, won't take you long, and I promise, it's a perfect Valentine's day gift for your loved ones! 

Vanilla Valentine's day Shortbread
(makes around 30 pieces)
Shortbread pastry 
325g plain flour 
200g butter
125g caster sugar
2tsp vanilla extract of vanilla seeds from 1 vanilla pod 
2 egg yolk 

Decoration 
250g icing sugar
6 tbsp water 
Pink food coloring 
Sugar to sprinkle 

Add flour into big bowl and add cut butter. Mix it until mixture looks like breadcrumbs.
Add sugar, vanilla and egg yolks and mix well to a smooth paste, cling film and rest for at least 20 minutes. Preheat the oven to 180°C. Roll out a sheet, then cut desired shapes, transfer carefully to a flat tray lined with silicone paper, and bake for around 15 minutes, until just starting to turn brown.
Leave it to cool, for around 20 minutes. Meantime prepare icing : mix sugar with water, and add few drops of pink coloring. More coloring you add, stronger shade you will get. Just choose the one, which you like the most. 
Transfer icing into a pipping bag with really small nozzle. 
The best way to decorate any biscuits with icing, is to start with drawing boarders around the cookies. That will help to keep icing tidy and clean. When ready, you need to wait a bit, to allow icing to dry. Now you can start filling up the interior of your little treat. Create how many colors and designs you want- from little dots to hearts. Use your imagination. On the end, sprinkle biscuits with sugar. 
You can add some food coloring to your sugar, and give it a a good mix- it will change a color, and look better on your shortbread. Allow shortbread to dry- it can take up to one day.
