French classic with Winter twist : Cinnamon, Apple and Chocolate
Madeleines
(makes 40 pieces)
200 g sugar
20 g cocoa powder
1 tsp cinnamon
250 g flour
180 g butter
5 g baking powder
1 apple
Preheat oven to 190 °C.
Place butter and sugar in a mixer bowl and beat until it has
white, thick creamy texture .
Slowly add eggs, scarp down the sides of the bowl, and
ensure its fully mixed. No butter at the
bottom of the bowl please !
Sieve the flour, baking powder and cinnamon and mix it all
together until nice and smooth .
Pipe into special Madeleines molds. (You can get them in
good baking equipment stores or online)
Peel the apples and cut into small cubes. Stick one or two
little cube into each of Madeleines.
Bake for 10-15
minutes (depends of your mold size ).
